Breakfast, Lunch or Dinner a healthy waffle meal has all the wholesome ingredients to make a nutritious meal day or night.
You will need:
- 2 eggs, separated
- 1 1/2 cups milk, up to you if it is whole or 2% or skim or soy or almond milk
- 1/2 cup pure vegetable oil, up to you but oil will alter the taste as all oils have their own flavor. I prefer Wesson Vegetable Oil since it is soy.
- 1 1/4 cups flour, can be part whole wheat and part non-bleached white flour
- 1 tablespoon baking powder
- 1 tablespoon sugar or honey or stevia
- 1 teaspoon salt, optional
Lightly brush waffle iron or a griddle if making pancakes and pre-heat.
In a small bowl, beat egg whites until stiff, but not dry. Set aside. In large bowl, beat egg yolks until thick and lemon colored; conitnue beating adding mild and vegetable oil. Add dry ingredients and beat until smooth. Fold in the egg whites.
Pour about 1 cup or as much or as little depending on the waffle iron or griddle on the pre-heated grid. Close unit and bake until light goes out (about 5 five minutes). You will get to know how you like your waffles or pancakes and you can adjust the time to suit your preferences.
If you want to make some for ice-cream sandwiches, you might watn them darker a bit.
With lots of berries on top or cut up fruit, it makes a pretty healthy meal. At dinner time, you can add a salad or a bowl of vegetable soup and it is a prefect meal anytime.
I prefer a non-stick waffle iron or griddle but you will have your onw preferences once you make these a couple of time.
If you add whole wheat flour, it makes a different consistency and cooking time changes too but do not feel bad about experimenting with this recipe. It is fun and really easy.
